The Ark Pub and Eatery Black Cod over Black Bean Rice

For 4 people

Preparation time: 10 minutes

Cooking time: 10 minutes

Preheat the oven to 375

You will need:

2 frying pans * (one of which must be oven safe. If you do not have an oven frying pan, you can transfer the cod – once sautéed on both sides – to an ovenproof dish).

4 8oz cod fillets

4 cups of precooked white rice

2 cups of black beans

4 teaspoons of cumin

Darkening seasoning

1 cup of chicken broth

1 bell pepper (diced – seedless)

1 onion (diced)

1 avocado (peeled and cut into 12 thin slices)

1 1/2 cups crumbled feta cheese

chipotle mayo

Cooking Instructions:

Liberally coat the pan with olive oil

Brown the onion and the diced pepper for 1 minute

Add the rice (precooked) and beans to the pan

Add the cumin and 2 teaspoons of blackening seasoning

Add the chicken broth

Reduce – stirring occasionally

While reducing, preheat your second * ovenproof pan with olive oil

Coat both sides of the cod fillet with blackening seasoning

Sauté both sides for 30 seconds

* Place the baking dish in the oven for 4 to 5 minutes

To serve:

Place equal amounts of the rice and bean mixture on four plates

Place the cod fillets on the rice and bean mixture

Add 3 avocado slices to each cod fillet

Sprinkle crumbled feta cheese over the dish (to taste)

Drizzle lightly with chipotle

KNOXVILLE, Tennessee (WVLT) – When you step outside the city limits, eastern Tennessee quickly turns into a farming country. Your neighborhood farmer grows more than just fresh produce, this is especially true for some acres that just aren’t suitable for beans or corn.

A local business is expanding on these unused acres.

“If you are a farmer and you don’t care about the environment, then you won’t be farming for very long,” said Jake Harris.

Harris is ready to bale the switchgrass.

“If other crops go down, then you still have this,” Harris said.

On the historic Stokely Farm in Tellico Plains, they are in 40 acres of fallen grass, but about 150 acres in total.

When Stokely teamed up with Vonore’s Genera, they didn’t need any additional gear.

“Planted with a no-till seeder. Or drill. We harvest it with a disc hoe, ”said Harris.

Harris said the long roots help prevent flooding and late-season cutting helps restore nutrients to the soil.

“You don’t keep cultivating the same land by not taking care of it the right way,” Harris said.

Native grasses grow in soil that cannot support other plants.

“Most farms have low productivity land,” said Kelly Tiller, CEO of Genera.

“It was just another source of income. and some late ones who weren’t so good for the livestock or the crops, Harris added “

Grass from Stokely’s and other farms can be found here in Vonore in this center. These balls turn into packaging; biodegradable, compostable, recyclable. CEO Kelly Tiller said it’s not only good for the Earth, but also for the economy.

“The demand for these products is almost insatiable right now. And today almost everything that is available on the market is imported, ”Tiller said.

As restaurants bid for limited supplies and the boat sits offshore, Genera is expanding. A new 50,000 square foot building was erected behind the plant.

“We also have a local supply chain. This provides this material, which delivers to customers, ”Tiller said.

Tiller buys local switchgrass, sending it to regional distributors. This means fewer kilometers in the fossil fuel chain.

“They’re cost effective, they’re not just environmentally friendly,” Tiller said.

The clamshell containers, recognizable in some nearby delicatessens, are sturdy. Tiller said they are also clean.

“We are an unbleached plant. So we’re not adding any aggressive bleach, ”Tiller said.

She also said that Genera recycles almost all of the water inside the plant.

Unlike fresh produce, these herbs can be stored for years, when the demand increases and the demand is there.

“We need more farmers,” Tiller told WVLT News.

Soon you may be seeing native switchgrass all over the earth.

The climate continues to warm and international experts have said extreme droughts will become more common.

A team of plant biologists from the Oak Ridge National Laboratory added a poplar gene to the grass. This can help protect the plant from the climate, as it is now more resistant to drought and disease.

A barbecue restaurant that will provide take-out and delivery service in Seaside Heights has been approved by the borough planning council to open on the boulevard and operate two smokers on site.

Restaurant, Barbecue at sea, owned by Richard Cline, recently made his second presentation to the board after changes were made to a request originally heard in September. With all the paperwork in place and a final plan for the restaurant drawn up, Cline was granted permission to open in the mall in 1520 Boulevard, between Hiering and Sampson avenues. It will replace a preschool and daycare center that previously occupied the space, which is located next to the Heavy Reel Brewery, another new addition to the trade corridor.

“Gradual improvements are happening at the north end of the boulevard, and that’s something to encourage,” said Michael Redpath, director of the Seaside Heights Business Improvement District, in support of the request.

Cline’s first location opened in 2018 with great reviews, but Seaside Heights officials needed more information on the smoking devices that would be present at the relatively small Boulevard site before approval. cannot be granted, in particular due to the proximity of the site to other buildings and the fire code. concerns.

The smokehouses are not towed, and can be moved if necessary. They are also fueled only with wood and charcoal; no gas or electricity supply is required. The installation will be completed by heating boxes. The smokers work, he says, separating into two chambers with charcoal and pieces of wood at the bottom. The smoke is then carried to the side and through a duct where it exits.

Cline said he plans to open from noon to 7 p.m. Wednesday through Saturday and from noon to 4 p.m. on Sunday, although at the suggestion of the board, the city approved a closing time of 10 p.m. hours in case he reconsiders for the busy summer.

The restaurant will not have a table.

“It will be strictly take out and deliver,” Cline said. “We’re not going to have anyone eating there – it will only be take out. “

A nearby resident objected to the presence of smokers, expressing concern that the smell they produce could be overwhelming.

“I don’t mind the restaurant, take out or delivery, but I am deeply concerned about the smokers and the smell,” said the resident. “We don’t want to be sitting on our balconies having coffee and smelling the barbecue. “

Board members, however, were happy with Cline’s assurances about the baking process and ultimately voted 8-0 to approve the request with one abstention.

From pursuing a medical career and producing cannabis to opening four restaurants and returning to medicine, it has been a wild ride over the past eight years for Michael Thompson.

His plan was to be a surgeon. So how come before the age of 40, he and his wife, Crystal, own four successful restaurants and a lounge in downtown Colorado Springs?

You’ve probably heard of them: T-Byrd’s Tacos and Tequila (the first, which opened in 2016), Dirty Byrd Whiskey and Wings, Mood Tapas Bar, Bird Tree Café and District Elleven lounge. A second T-Byrd location is slated to open in November.

“In 2013, I was a student at the University of North Texas Health Sciences Center when I went on vacation to visit a friend from high school in Colorado,” he said. “I have met people who needed a medical director for their future cannabis business as well as someone who could manage production.”






T-Byrd’s Tacos and Tequila was the first restaurant opened by Michael and Crystal Thompson.




Thompson did some research and weighed the pros and cons of dropping out.

“I loved school, I still love it, but I felt it could be a once in a lifetime opportunity to jump on board something as important as the legalization of cannabis. I knew it would be huge, ”he said. “And I always said I would go back to school. Of course, I had to talk to Crystal, but she was surprisingly open to the idea.

Thompson joined the team at what would become Emerald Fields – A Cannaboutique, and took on the challenge of understanding the process of growing the cannabis plant.

“I had to learn about agriculture because we were planning to build a large grow facility,” he said. “I had covered chemistry in college and graduate school, so I understood the science of making infusions and extracts.”

When he eventually became the owner of the business, his role became much less practical, which allowed him to pursue a new interest: opening a small taco bar.

Michael Thompson and his family will be moving to Barbados to attend medical school, but his Springs restaurants will continue to buzz. “Because we have employees who we have complete confidence in, we can leave them in charge while we are away,” he said.




“We were doing fine,” he said. “We were living comfortably. Crystal was responsible for regional clientele at Christian Dior, we rented a small house and our cars were paid for. We decided to take our chances by starting a food business.

They rented a small space that was part of the old downtown Hunan Springs restaurant and got started.

“We were literally strapped for cash by the time we opened the doors,” Thompson said. “We ate a lot of tacos for the next five weeks. We opened with $ 88.27 from a piggy bank.

They also continued their day job, putting all their money back into the taco bar so they wouldn’t have to take out a loan.

“My philosophy is not to give up,” said Thompson. “This is when people fail; 90% percent of unsuccessful homeowners have lost their trust. Once it’s lost, it’s hard to come back.

As all of their restaurant experience had been as a waitress and bartender while in college, they hired a relative to take care of the cooking.

Their determination paid off. Thompson predicts the taco bar will make over $ 2 million this year.

“Cost control is the most important thing,” he said. “I run a spreadsheet every day in each restaurant to make sure the right decisions are made. “

Despite the success, Thompson decided he was not done with his initial career choice.

“I loved what I was doing,” he said, “but what I really wanted to do was be a doctor. “

His biggest obstacle to going back to school would have been to pass the Medical College Admission Test (MCAT). Due to COVID-19, however, testing centers have been closed and schools have started to assess applicants without requiring an MCAT.

“I said, ‘That’s the sign.’ It was about time, ”he said.

Rather than returning to Texas or applying to Colorado, Crystal remembered telling her about offshore medical schools. They liked the idea, and in 2019 Michael was accepted to Ross University School of Medicine in Florida.

“We spend one in four years on an island, which is what Crystal loved,” he said.

Michael completed his first year of online medical school and the couple welcomed a baby girl, Sunny Byrd Thompson, in May. The family will be moving to Barbados in January so Michael can complete his second year.

He remains a partner in the cannabis industry and has built his restaurant team with the best professionals he and Crystal can rely on to run the businesses.

“Because we have employees who we have complete confidence in, we can leave them in charge while we are away,” he said. “We moved to Boston for 13 months a few years ago and they have proven to us that they can rise to the occasion.”

For some parents, it would be unthinkable for a child to drop out of college to enter the cannabis business. Not Mary Wright, Thompson’s mother.

“I had no doubts about his decision,” she said. “It was a wise move for Michael at the time. He was always relentless in the pursuit of his passions.

As for the success of his restaurants, Wright describes it as “incredible”.

“He and his wife, Crystal, have worked extremely hard to make restaurants special and distinct experiences,” she said. “His own success built his optimism. He now knows it can be done.

The owner of a barbecue restaurant and take-out business looking to expand to Seaside Heights is expected to appear at a Borough Planning Council meeting later this month in the wake of a discussion at the last board meeting in September.

Barbecue at sea, owned by Richard Cline, is looking to expand to a second location in Seaside Heights since its first in Point Pleasant Beach, where his restaurant has received excellent reviews since opening in 2018. The barbecue supplier plans to open in the shopping center at 1520 Boulevard, between Hiering and Sampson avenues. It will replace a nursery school and a daycare center that previously occupied the space.

Cline was invited to return to the board at its October 27 meeting so the board could review a more comprehensive sitemap. At first, it was believed that a simple interior drawing would suffice before the board could vote to approve the request, but the restaurant is now looking to locate a smokehouse outside, which requires further examination by the consulting engineer.

“The change in use is obvious: we are moving from a daycare to a restaurant-type business,” said attorney Matthew Heagen, counsel to Offshore BBQ. “He has a smokehouse, so to speak, where he sells smoked meats and smoked foods to individuals who wish to purchase them. It would mainly be a take-out place.

A few tables will be located in the restaurant, but they will mainly be for those waiting to collect their orders. Cline’s application is unique in that his business is not a traditional restaurant and does not require a commercial kitchen to operate, but such a niche business is not described in the borough’s zoning ordinance.

“My client does not intend to have a full kitchen, in part because part of his product will be made elsewhere and it will be a duplication, and because our goal will be to use part of the outdoor space of this property which is unique and, arguably, particularly suited for this purpose, ”Heagen told members of the board of directors.

Cline, in fact, included language in a public notice regarding the restaurant indicating that smokers would be located outside. As such, there is no need to issue a series of additional notices, said Council Prosecutor Steven A. Zabarsky. But smokers were not included in an initial nomination file.

“Obviously we’re going to need a sitemap,” Zabarsky said. “We have to know if there will be tables, interior decoration, where the smokers are going to go, and that brings up some waste issues and all the rest of it.”

Zabarsky said representatives from Offshore BBQ could work with Doug Klee, the planning board engineer, to determine the extent of information the board needs to complete the application and vote.

The next planning council meeting is scheduled for October 27 at 6 p.m. in the council chamber above the borough fire station.

Restaurant owner by trade, George Hanakis can also claim New Jersey’s record, the blue tile fish, also known as the gray tile fish.

Hanakis rolled in the record-breaking 23-pound, 8-ounce blue tile tile on a tile-tile trip through Wilmington Canyon aboard the Jamaica Party Boat from Brielle.

“We were excited when we saw this fish on the surface. It was big for a blue line,” Hanakis told The Asbury Park Press.

His fish eclipsed the previous state record of four ounces. A mount of the fish is being made at Gray Taxidermy in Pampano Beach, Florida, and when completed, it could adorn the walls of the Hanakis Coney Island restaurant in Perth Amboy.

A Greek immigrant, Hanakis is an avid fisherman who often fishes offshore on the region’s party boats. His other big freelance catches include a 250 pound bigeye tuna and a 38 pound grouper.

Surf blitz

The blue fish was turned into a binge eating on Tuesday in Seaside. According to Grumpy’s Bait & Tackle in Seaside Park, the fish were attacking the mules that started their race. Blues as big as at least 10 pounds were landed by surf fishermen, also excited for the action.

A few fishermen landed striped bass, which was under the blues during the melee, according to the bait shop.

Elsewhere, Giglio’s Bait and Tackle at Sea Bright said the big blues and bass were pushing the bunker and mullet down to the beach on Wednesday, in the last hours of summer. Poppers and Diamond Jigs worked to land the fish.

Nick Honachefsky of Saltwater Underground is ready for another Barrier Island Beach Brawl surf fishing contest. The date is October 8 and 9. The fishing grounds are the South Pier at Manasquan Inlet to the North Pier at Barnegat Inlet.

The blues were somewhat cooperative for the party boats that fished them at the Shrewsbury Rocks or the Rattlesnake. According to Captain Rich Falcone on the Golden Eagle party boat, the bruises weren’t really in the mood to bite Tuesday morning, so he went off a few miles and ate the mackerel.

After his rates had satiated with macks, he returned for the blues which by the end of the day had turned on. Falcone said the boat has stayed a bit longer to capitalize on the bluefish action.

Captain Tom Buban on the Atlantic Star aims for the porgies. Its fishing spots in the bay and in the Ambrose canal. The catch reached up to 20 fish per fisherman during his half-day outings. Its prices are also reeling from the ballistae.

Blue claw crabs are still picking, although it has started to slow down a bit. Karen of the Red Bank Marina said a group of three crabbers returned from a trip to the Swimming and Navesink rivers with half a bushel of crabs on Wednesday. She said the crabs were almost all males.

Nautical Show

The Jersey Shore Boat Sale & Expo returns to First Energy Park in Lakewood, home of the Blue Claws. The event runs Friday through Sunday and is presented by the Marine Trades Association of New Jersey. More than 20 of the state’s top boat dealers are in attendance with 2022 models as well as end-of-season offers on this year’s models.

An LBI staple, Chicken or the Egg restaurant, is opening a second location, but this one won’t be on the shore.

The second location, scheduled to open in summer 2022, will be in Marlton, according to the Burlington County Times.

But this new Chegg (as it is called) will have one important difference: it will have a liquor license. The liquor license comes with a new beer garden. The new location will have the same color scheme as the original, with TVs and caricatures on the wall. The outdoor bar will include sofas, chairs, picnic tables and fire pits. They also plan to offer live entertainment.

Co-founder Mark Cohen explained the appeal of chicken or egg to the Burlington County Times:

“We represent summer, the LBI, vacations and just fun. It’s like that feeling when you cross the bridge and all your tension goes away – I’d like to think we represent that feeling. People from Pennsylvania , New Jersey, New York and everyone love coming to LBI and they love hitting the Chegg because we’re LBI. “

The restaurant is now owned by Rob LaScala of the LaScala Restaurant Group, which owns several other restaurants in the state.

The Chicken or the Egg at Beach Haven is known for its breakfasts as well as its wings (as well as long lines). They offer 18 signature sauces for their wings.

A new restaurant as well as a number of land use claims are expected to be heard by Seaside Heights Planning Council as the borough’s redevelopment boom continues to develop.

At the board meeting on September 29, members will hear the application of a new take-out barbecue restaurant proposed for the Boulevard. Barbecue at sea, owned by Richard Cline, is looking to expand to a second location in town since its first in Point Pleasant Beach, where his restaurant has received excellent reviews since opening in 2018.

The plan in front of the board provides for the opening of the restaurant in the mall in 1520 Boulevard, between Hiering and Sampson avenues. The company is seeking board approval for a waiver that would allow the establishment to operate a restaurant without having a “full-service kitchen” on site. Offshore, demand indicates, intends to provide meals to customers that are prepared at either location, but they will be provided to customers primarily for take-out. Food for the barbecue would be prepared in a smokehouse on or off site.

The applicant intends to house any smoker used at this location, either in front of or next to the front of the restaurant.», Indicates the application.

Also at the September 29 meeting, the board will consider the owner’s request for 214 Sumner Avenue divide an existing lot in the low density residential area into two lots. A customary exemption is also sought for the two lots since the buildings planned are offered a height of 36.5 feet where only 27 feet are allowed.

The meeting is scheduled to take place on September 29 at 6 p.m. in the Council Chamber, 116 Sherman Avenue.
